For an interesting look into the history of the bible as proven by archaeology this book should be on your short list. The majority of the book deals with the Old Testament, but there is a decent sized section on the New Testament. Some of the finds really make the words of the bible much more

About the Author

Werner Keller (1909–1980) was a German civil servant, journalist, and anti-Nazi resistance fighter. In 1955 he published The Bible as History, his best-known book, which correlated the text of the Bible with the results of archaeological diggings in the Middle East. It has been translated into more than twenty languages and updated in two revised editions. He is also the author of The Etruscans.

I liked this the best of the three biblical archaeology books I read this spring, even though it is the oldest.
However, Keller's procedure was to first produce the "good news" for believers in the historical accuracy of the Bible, and then undercut and dismiss it with some "bad news" derived form
